A Good Day starts with a Tomato

CAPRESE SALAD WITH A KICK

Close your eyes, taste this salad and let your mind travel all the way to…Italy. This light Tomato and Mozzarella Salad will be your guide!

INSTRUCTIONS:

1.

Plentifully sprinkle sliced vine-ripe tomatoes with salt.

2.

Arrange tomatoes and mozzarella on a plate in an alternating and overlapping pattern.

3.

Sprinkle whole leaves of basil over the layers of tomatoes and mozzarella.

4.

Drizzle the salad with olive oil and basil pesto.

5.

Sprinkle with a small pinch of salt and black pepper.

6.

Drizzle the salad with small stripes of balsamic vinegar.

INGREDIENTS:

4 large vine-ripe tomatoes sliced into

¼ inch slices 1 pound fresh mozzarella cheese sliced into ¼ inch slices

15-20 basil leaves

3 tablespoons extra virgin olive oil

3 tablespoons basil pesto (optional)

sea salt and pepper to taste

1 cup balsamic vinegar
