INSTRUCTIONS:
1.
Preheat the oven to 450° Fahrenheit.
2.
Cut the peppers in half lengthwise and remove the seeds and other insides.
3.
Place the caribe peppers in a small baking dish. Drizzle with olive oil. Bake in heated oven for 15 to 20 minutes or until tender and well-charred. Remove from oven and let cool. Drain from oil.
4.
If you’re using canned chickpeas, drain them and reserve some liquid and a few chickpeas for topping.
INGREDIENTS:
4 cups cooked chickpeas
3 tbsp tahini
1/2 cup lemon juice
2 caribe peppers
4 large garlic cloves, pressed
1 tsp smoked paprika
sea salt
pepper
red pepper flakes
extra virgin olive oil, optional
5.
In the food processor fitted with a blade, add the chickpeas, tahini, lemon juice, caribe pepper (you can add only one pepper and check the spiciness after a few spins in the food processor), garlic, and smoked paprika. Drizzle a little extra virgin olive oil.
6.
Process until smooth.
7.
Add some of the reserved liquid or water if necessary. Add salt and pepper to taste.
8.
Transfer to a serving bowl. Cover and chill.
9.
When ready to serve, top hummus with a little more extra virgin olive oil, the reserved chickpeas and the red pepper flakes.
Enjoy!
