ACORN SQUASH (Cucurbita pepo)
Acorn squash (Cucurbita pepo), also called pepper squash, is a winter squash with distinctive longitudinal ridges on its exterior and sweet, yellow-orange flesh inside. As the name suggests, its shape resembles an acorn. Acorn squash have sweet, yellow-orange flesh that has a slightly nutty flavor. Acorn squash is most commonly baked, and savory recipes, it may be stuffed with rice, meat or vegetable mixtures.

Acorn squash is highly nutritious, providing a quality source of vitamins, minerals, and fiber. Though acorn squash is low in calories, it’s packed with various nutrients. Acorn squash belongs to a species group that originated and was first cultivated in the Americas thousands of years ago: Cucurbita pepo. The English word “squash” comes from a Native American word askutasquash, which means “eaten raw or uncooked.”
