ROASTED ANAHEIM PEPPER SALSA
A flavored smokey salsa, easy to make with fresh ingredients for a fresh and tasty result!

INSTRUCTIONS:
1.
Preheat the oven to 425° Fahrenheit.
2.
Line a baking sheet with parchment paper.
3.
Place tomatoes, onion, peppers, and garlic on the baking sheet and lightly drizzle with olive oil.
4.
Roast for about 30 minutes, until vegetables are tender. Let cool slightly.
5.
Place roasted vegetables in a food processor. Add in lime juice, cilantro, oregano, cumin, and granulated sugar and pulse until desired consistency.
INGREDIENTS:
12 ounces roma tomatoes
1 onion, sliced
4 Anaheim peppers, chopped, stems and seeds removed
3 garlic cloves, minced
olive oil
juice from 2 limes
1/2 Cup Cilantro, chopped
2 tsp dried Oregano
1/2 tsp cumin
1-2 tsp granulated sugar
Salt and freshly ground pepper to taste
