Lime Steak Fiesta
MARINATED STEAK TACOS with LIMES

INGREDIENTS:
For the marinade:
1 ½ lbs flank steak
2 limes, juiced
3 tbsp olive oil
4 garlic cloves, minced
1 tsp ground cumin
1 tsp chili powder
½ tsp smoked paprika
1 tbsp honey or brown sugar Salt and pepper to taste
For the tacos:
Corn or flour tortillas
1 lime, cut into wedges (for serving)
1 cup chopped cilantro
1 small red onion, finely diced
1 avocado, sliced
Cotija cheese or crumbled queso fresco (optional)
Salsa or hot sauce (optional)
INSTRUCTIONS:
1.
Marinate the steak: In a bowl, whisk together lime juice, olive oil, garlic, cumin, chili powder, paprika, honey, salt, and pepper. Place the flank steak in a resealable plastic bag or shallow dish, and pour the marinade over the steak. Seal or cover and refrigerate for at least 2 hours (up to 8 hours for more flavor).

Grill the steak: Preheat a grill or skillet to medium-high heat. Remove the steak from the marinade and discard the excess. Grill the steak for about 4-5 minutes per side for medium-rare, or longer to your preferred doneness. Let the steak rest for 5 minutes before slicing thinly against the grain.

Warm the tortillas: While the steak rests, warm the tortillas in a dry skillet or directly over the grill.

Assemble the tacos: Layer sliced flank steak on each tortilla. Top with cilantro, diced red onion, avocado slices, and crumbled cheese if using. Squeeze fresh lime juice over the top.

Serve: Add salsa or hot sauce if desired. Serve with lime wedges on the side for extra zest.
