BUTTERNUT SQUASH (Cucurbita moschata)
Butternut squash is a type of winter squash that grows on a vine. Low in fat, butternut squash delivers an ample dose of dietary fiber, making it an exceptionally heart-friendly choice. Because of its tough outer shell it keeps well for long periods of time. It is used culinarily as a vegetable that can be roasted, sautéed, toasted, puréed for soups such as squash soup, or mashed to be used in casseroles, breads, muffins, and pies.
NUTRITIONAL INFORMATION
Butternut squash provides great amounts of potassium, important for bone health, and vitamin B6, essential for the proper functioning of both the nervous and immune systems. The flesh is full of vitamins A and C, and the seeds are packed with protein and heart-healthy fats. Beta-carotene, found in butternut squash, helps to support the natural function of the immune system, along with vitamin A which can help to prevent infections.
SHORT STORY
Native Americans cultivated squash for thousands of years before the modern era. Butternut squash is modern variety of winter squash. It was developed by Charles Legget of Stow, Massachusetts in 1944.

FUN FACT
Butternut squash and pumpkins are very similar, however a pumpkin is classified as a fruit, where as butternut squash is classified as a vegetable.
