Caribe yellow peppers are also known as Güero Chiles, “güero” meaning light skinned or blonde in Spanish. Similar to the Hungarian Wax, these chiles are medium fleshed and slightly sweet with a bold flavor and waxy texture. This variety is hot (5,000 – 8,000 Scoville Units) and can be used as substitutes for Jalapeno to add a different color and flavor to sauces, relishes, soups, stews, casseroles, as well as meat and poultry dishes. Roasted Caribe peppers have an enhanced flavor.
NUTRITIONAL INFORMATION
Caribe peppers have an amazing nutritional content. They are an excellent source of vitamin A and C. They are low in calories thanks to their high water content and they also contain folate, fiber, and vitamin B6. Their capsaicin content has been known to provide anti-inflammatory benefits. The higher the capsaicin content, the spicier the chile pepper will be.
