Vine-Ripe Tomatoes

VINE-RIPE TOMATOES (Solanum lycopersicum)

Vine-ripened tomatoes differ from other tomatoes in the timing of the harvest, which depends largely on color and the growth stage. Vine-ripened tomatoes are those that are picked at the breaker stage, when the tomato is almost light red in color and quickly turn dark red. These type of tomatoes soften as they ripen and the longer growers leave them on the vine to become ripe, the less time stores have to sell them without many of the tomatoes going bad.

NUTRITIONAL INFORMATION

Vine-ripe tomatoes, are a good source of vitamin C, potassium, vitamin K, and folate. Some research indicates that vine-ripened tomatoes contain higher levels of antioxidants and other nutrients than those picked before peak ripeness. Numerous studies have found that diets rich in tomato products can lower blood pressure and cholesterol, and improve heart health.

SHORT STORY

The wild ancestor of the tomato is native to western South America. These wild versions were the size of peas. The Spanish first introduced tomatoes to Europe, where they became used in Spanish food.

FUN FACT

La Tomatina is an annual festival in Spain, where people throw 150,000 tomatoes at each other. That sounds like fun!
